Deliciously creamy and savory, these ultimate twice-baked potatoes are packed with turkey bacon and chicken ham, making them the perfect comfort food.

Ingredients

  • 4 large russet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup cooked chicken ham, diced
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1/4 cup milk
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 1 hour or until tender.
  3. Let the potatoes cool slightly, then cut them in half and scoop out the insides into a bowl.
  4. Add the turkey bacon, chicken ham, sour cream, cheddar cheese, green onions, milk, salt, and pepper to the bowl and mix until creamy.
  5. Fill the potato skins with the mixture, top with additional cheese if desired.
  6. Return the potatoes to the oven and bake for an additional 15-20 minutes, until golden and heated through.

Notes

  • For a healthier version, substitute Greek yogurt for sour cream.
  • Feel free to add any other toppings such as broccoli or additional cheese.
