A delicious and comforting Thanksgiving dish that combines layers of potatoes and rich French onion flavor.

  • 2 pounds potatoes, thinly sliced
  • 2 large onions, caramelized
  • 1 cup beef broth
  • 1 cup heavy cream
  • 2 cups shredded cheese (Swiss or Gruyère)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and add caramelized onions.
  3. Layer half of the sliced potatoes in a greased baking dish.
  4. Add a layer of caramelized onions and half of the cheese on top.
  5. Repeat the layering with the remaining potatoes, onions, and cheese.
  6. In a separate bowl, mix beef broth, heavy cream, thyme, salt, and pepper.
  7. Pour the liquid mixture evenly over the layered potatoes.
  8. Cover with foil and bake for 40 minutes.
  9. Remove the foil and bake for an additional 15 minutes until golden and bubbly.

Notes

  • For a vegetarian option, substitute beef broth with vegetable broth.
  • Let it sit for 10 minutes before serving for easier slicing.
