  • 1 teaspoon ground cinnamon

  • 1 cup unsweetened applesauce
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1 cup dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the dry ingredients together.
  3. In another bowl, whisk together the wet ingredients.
  4. Combine both mixtures and fold in the walnuts and cranberries.
  5. Pour the batter into a greased bundt pan.
  6. Bake for 50-55 minutes, or until a toothpick comes out clean.
  7. Let cool for 10 minutes before removing from the pan.
  8. Serve with a dusting of powdered sugar or your favorite frosting.
