2 Cornish hens
4 strips turkey bacon, chopped
1 cup bread crumbs
1/2 cup chicken broth
1/2 onion, diced
2 celery stalks, diced
2 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
Salt to taste
Pepper to taste
Instructions
Preheat the oven to 375°F (190°C).
In a skillet over medium heat, cook the turkey bacon until crispy. Remove and set aside.
In the same skillet, add onion, celery, and garlic, and sauté until softened.
Add bread crumbs, chicken broth, thyme, rosemary, salt, and pepper to the skillet; mix well.
Stuff the mixture into each Cornish hen. Place hens in a baking dish.
Bake for 1 hour or until the internal temperature reaches 165°F (74°C).
Remove from the oven and let rest for 10 minutes before serving.
