  • 4 cups coleslaw mix
  • 1/2 cup chopped apples
  • 1/4 cup chopped walnuts
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season chicken thighs with salt and pepper, then sear in the skillet until browned.
  3. In a bowl, mix apple cider, vinegar, and mustard; pour over the chicken.
  4. Reduce heat and simmer until chicken is cooked through.
  5. In another bowl, combine coleslaw mix, apples, walnuts, mayonnaise, and honey.
  6. Serve the chicken with the autumn slaw on the side.
