  • 1 cup apple cider
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 4 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/4 cup apple slices
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1 tablespoon maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together apple cider, honey, Dijon mustard, salt, pepper, and red pepper flakes.
  3. Place chicken in a baking dish, pour the apple cider mixture over the top, and bake for 35-40 minutes until cooked through.
  4. While the chicken is baking, combine shredded cabbage, carrots, and apple slices in a large bowl.
  5. In a separate jar, mix apple cider vinegar, olive oil, and maple syrup, then pour over the slaw and toss to coat.
