1 cup sushi rice
1 1/4 cups water
1 pound fresh salmon, cooked and flaked
1/4 cup mayonnaise
2 tablespoons sriracha sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
1/4 cup chopped green onions
1 sheet nori, sliced into strips
1 tablespoon sesame seeds
Instructions
Preheat your oven to 350°F (175°C).
Rinse sushi rice under cold water until the water runs clear. Combine rice and water in a pot, bring to a boil, then reduce heat, cover, and simmer for 18 minutes.
In a bowl, mix the flaked salmon, mayonnaise, sriracha, soy sauce, sesame oil, and green onions.
Spread the cooked sushi rice in a baking dish, then top with the salmon mixture.
Bake for 20-25 minutes until heated through.
Garnish with nori strips and sesame seeds before serving.
Notes
Adjust the spiciness by varying the amount of sriracha.
For a crunchy topping, broil for the last 2-3 minutes of baking.
