  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon, juiced and zested
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Place chicken thighs at the bottom of the slow cooker.
  2. Add rice, chicken broth, lemon juice, lemon zest, garlic, thyme, rosemary, salt, and pepper.
  3. Mix ingredients gently to combine.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken and mix it back into the rice.

Notes

  • For extra flavor, marinate the chicken for a few hours before cooking.
