Ingredients

  • 2 pounds chicken thighs
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup carrots, chopped
  • 1 cup potatoes, diced
  • 2 cups chicken broth
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1 tablespoon sugar

Instructions

  1. In a slow cooker, add the chicken thighs, soy sauce, sesame oil, garlic, ginger, carrots, potatoes, chicken broth, gochugaru, and sugar.
  2. Stir to combine all the ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken and mix back into the stew.
  5. Serve hot and enjoy!
