  • 2 pounds beef chuck, cut into cubes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 2 bell peppers, chopped
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup elbow macaroni
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a slow cooker, combine the beef, onions, garlic, paprika, caraway seeds, tomatoes, beef broth, bell peppers, Worcestershire sauce, salt, and pepper.
  2. Stir until well combined, then cover and cook on low for 6-8 hours, or until the beef is tender.
  3. About 30 minutes before serving, add the elbow macaroni and stir. Cover and cook until the pasta is tender.
  4. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, sear the beef in a skillet before adding to the slow cooker.
  • Feel free to add other vegetables like carrots or potatoes for added nutrition.
