  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 can (14 oz) coconut milk
  • 3 tablespoons massaman curry paste
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 medium potatoes, diced
  • 1 cup carrots, sliced
  • 1 tablespoon lime juice
  • 1/4 cup peanuts, chopped

Instructions

  1. In a slow cooker, combine beef, coconut milk, curry paste, onion, garlic, fish sauce, and brown sugar.
  2. Add potatoes and carrots and stir to combine.
  3. Cook on low for 8 hours or high for 4 hours until the beef is tender.
  4. Stir in lime juice and top with chopped peanuts before serving.

  • For a thicker curry, let it cook uncovered for the last hour.
