A hearty and delicious pot roast recipe that brings the flavors of French onion soup to your table.

  • 3 pounds chuck roast
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Heat olive oil in a large Dutch oven over medium-high heat.
  3. Season the chuck roast with salt and pepper, then sear it on all sides until browned. Remove from the pot.
  4. Add the sliced onions and cook until translucent, about 5 minutes.
  5. Stir in minced garlic, thyme, and Worcestershire sauce and cook for another minute.
  6. Pour in the red wine and scrape up any browned bits from the bottom of the pot.
  7. Add beef broth and return the roast to the pot.
  8. Cover and transfer to the oven. Cook for 3-4 hours until the meat is tender.
  9. Let rest for 10 minutes before slicing and serving.

Notes

  • For extra flavor, you can add carrots and potatoes to the pot roast.
  • Serve with crusty bread to soak up the delicious gravy.
