- 3 pounds chuck roast
- 2 large onions, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons Worcestershire sauce
- 2 teaspoons thyme
- Salt to taste
- Black pepper to taste
- 2 tablespoons olive oil
- Preheat the oven to 325°F (163°C).
- Heat olive oil in a large Dutch oven over medium-high heat.
- Season the chuck roast with salt and pepper, then sear it on all sides until browned. Remove from the pot.
- Add the sliced onions and cook until translucent, about 5 minutes.
