  • 1/2 cup finely chopped almonds
  • 1/2 cup raspberry jam
  • 1 teaspoon almond extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Mix in the almond extract.
  4. In another bowl, combine the flour, cornstarch, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.
  6. Stir in the chopped almonds.
  7. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  8. Make a small indentation in each ball and fill it with raspberry jam.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow to cool before dusting with powdered sugar.
