2 fillets salmon
1/2 cup pomegranate juice
1/4 cup fresh orange juice
2 tablespoons honey
2 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
Instructions
In a small saucepan, combine pomegranate juice, orange juice, honey, and minced garlic. Heat over medium heat until it starts to thicken, about 5-7 minutes.
Preheat the oven to 400°F (200°C).
In a baking dish, place the salmon fillets. Drizzle with olive oil and season with salt and pepper.
Pour the glaze over the salmon.
Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through.
