This Pancake Sausage Casserole is the perfect dish for breakfast or brunch, combining the flavors of pancakes and sausage into one easy recipe.

  • 1 pound breakfast sausage
  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 4 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the sausage in a skillet over medium heat until browned. Drain excess fat.
  3. In a bowl, whisk together the pancake mix, milk, eggs, maple syrup, vanilla, and baking powder until smooth.
  4. Spread the cooked sausage in a greased baking dish and pour the pancake batter over it.
  5. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  6. Let it cool for a few minutes before serving.
