  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 3 cups beef broth
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a large pot, combine the beef, onion, garlic, chiles, cumin, oregano, and beef broth.
  2. Bring to a boil, then reduce to a simmer and cook until the beef is tender, about 2 hours.
  3. Remove the beef, shred it, and return it to the pot to absorb the flavors.
  4. Warm the tortillas and fill them with the beef mixture.
  5. Top with cilantro and a squeeze of lime before serving.
