- 2 pounds beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 dried guajillo chiles, stems and seeds removed
- 2 dried ancho chiles, stems and seeds removed
- 1 teaspoon cumin
- 1 teaspoon oregano
- 3 cups beef broth
- 12 corn tortillas
- 1 cup chopped cilantro
- 1 lime, cut into wedges
- In a large pot, combine the beef, onion, garlic, chiles, cumin, oregano, and beef broth.
- Bring to a boil, then reduce to a simmer and cook until the beef is tender, about 2 hours.
- Remove the beef, shred it, and return it to the pot to absorb the flavors.
