  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon vegetable oil
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons flour

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Sprinkle the flour over the beef and stir to combine.
  4. Add the beef broth, potatoes, carrots, thyme, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and simmer for about 2 hours or until the beef is tender.
