  • 2 pounds beef chuck, cut into cubes
  • 3 tablespoons vegetable oil
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the beef and brown on all sides.
  3. Add the onions and garlic, cooking until softened.
  4. Stir in the thyme and bay leaves.
  5. Add the carrots, potatoes, beef broth, and Worcestershire sauce.
  6. Bring to a boil then reduce heat and simmer for 1.5 to 2 hours.
  7. Season with salt and pepper to taste.
  8. Remove bay leaves before serving.
