- 1 pound beef tenderloin
- 1 tablespoon olive oil
- 1 cup finely chopped mushrooms
- 1 teaspoon garlic, minced
- 1 tablespoon Dijon mustard
- 1 package puff pastry sheets
- 1 egg, beaten (for egg wash)
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium-high heat. Add mushrooms and garlic, sauté until moisture evaporates.
- Season the beef with salt and pepper, sear in the skillet for 2-3 minutes on each side. Remove and cool.
- Spread Dijon mustard over the beef.
- Roll out puff pastry, cut into squares. Place a spoonful of mushrooms on each square, add beef, wrap and seal.
- Brush with beaten egg, place on a baking sheet.
- Bake for 15-20 minutes until golden brown.
