  • 1 pound beef tenderloin
  • 1 tablespoon olive oil
  • 1 cup finely chopped mushrooms
  • 1 teaspoon garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 package puff pastry sheets
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium-high heat. Add mushrooms and garlic, sauté until moisture evaporates.
  3. Season the beef with salt and pepper, sear in the skillet for 2-3 minutes on each side. Remove and cool.
  4. Spread Dijon mustard over the beef.
  5. Roll out puff pastry, cut into squares. Place a spoonful of mushrooms on each square, add beef, wrap and seal.
  6. Brush with beaten egg, place on a baking sheet.
  7. Bake for 15-20 minutes until golden brown.
