These Mediterranean Quesadillas are filled with fresh spinach, tangy feta, creamy mozzarella, and savory red onion, making for a delightful meal.

Ingredients

  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 medium red onion, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced red onions and sauté until translucent.
  3. Add spinach and cook until wilted.
  4. Sprinkle in salt and pepper, then mix in feta and mozzarella until melted.
  5. Divide the mixture onto half of each tortilla and fold it over.
