2 cups cooked quinoa
1 pound chicken breast, diced
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup feta cheese, crumbled
1/4 cup olives, sliced
Instructions
In a skillet over medium heat, add olive oil and chicken. Season with garlic powder, paprika, oregano, salt, and pepper. Cook until chicken is golden brown and cooked through.
In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, feta cheese, and olives.
Add the cooked chicken to the quinoa mixture and toss to combine.
