  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 slices turkey bacon, cooked and chopped
  • 4 cups mashed potatoes
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and turkey bacon.
  3. Shape the mixture into a loaf and place in a baking dish.
  4. Bake for 45 minutes, or until the internal temperature reaches 165°F (74°C).
  5. While the meatloaf is baking, prepare the mashed potatoes.
  6. If desired, sprinkle shredded cheese on top of meatloaf during the last 10 minutes of baking.
