A delicious and healthy recipe combining cottage cheese, turkey bacon, and assorted veggies, perfect for a nourishing breakfast.

  • 1 cup cottage cheese
  • 1/2 cup diced turkey bacon
  • 1 cup chopped spinach
  • 1/2 cup bell peppers, diced
  • 3 large eggs
  • 1/4 cup shredded cheese
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, turkey bacon, spinach, bell peppers, and black pepper.
  3. Whisk the eggs separately and then add to the mixture.
  4. Stir in the shredded cheese and season with salt.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 25-30 minutes until the eggs are set and the top is golden.
  7. Allow to cool slightly before serving.
