Delicious Greek chicken meatballs served with a refreshing tzatziki sauce.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cucumber (for tzatziki)
  • 1 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat oven to 400°F.
  2. In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, salt, and pepper.
  3. Form mixture into meatballs and place on a baking sheet.
  4. Bake meatballs for 18-20 minutes until cooked through.
  5. For tzatziki, grate cucumber and squeeze out excess water.
  6. Mix cucumber with yogurt, olive oil, and lemon juice in a bowl.
  7. Serve meatballs with tzatziki sauce.

Notes

  • For extra flavor, add some feta cheese to the meatball mixture.
