A delicious and easy recipe for flourless cottage cheese pancakes paired perfectly with turkey bacon for a satisfying meal.

  • 1 cup cottage cheese
  • 1/2 cup oats
  • 2 eggs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 4 slices turkey bacon

Instructions

  1. In a bowl, blend the cottage cheese, oats, eggs, baking powder, salt, and vanilla extract until smooth.
  2. Heat a non-stick skillet over medium heat and add a little cooking oil.
  3. Pour 1/4 cup of the batter onto the skillet for each pancake.
  4. Cook for 3-4 minutes on each side until golden brown.
  5. In another skillet, cook the turkey bacon until crispy.
  6. Serve pancakes warm with crispy turkey bacon on the side.

  • For sweeter pancakes, add a little honey or maple syrup to the batter.
