Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until softened.
  2. Stir in rice and cook for 2-3 minutes, allowing it to toast slightly.
  3. Add chicken broth, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes.
  5. Once the rice is cooked, add shrimp and peas. Cover and cook for an additional 5 minutes, or until shrimp is pink and cooked through.
  6. Remove from heat, sprinkle with parsley, and serve immediately.

Notes
