- 2 green tomatoes
- 1 cup buttermilk
- 1 cup cornmeal
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 slices turkey bacon
- 4 slices whole grain bread
- 4 leaves romaine lettuce
- 1 avocado
- 1 tomato
- Slice the green tomatoes and soak them in buttermilk for 30 minutes.
- In a separate bowl, combine cornmeal, flour, salt, and pepper.
- Dredge the soaked tomatoes in the cornmeal mixture.
- Fry the tomatoes in a hot skillet until golden brown on both sides.
- Cook turkey bacon until crispy.
- Toast the bread and layer with lettuce, fried green tomatoes, turkey bacon, avocado, and sliced tomato.
- Top with the other slice of bread, slice, and serve.
