A delightful twist on the classic BLT using crunchy fried green tomatoes and turkey bacon.

Ingredients

  • 2 green tomatoes
  • 1 cup buttermilk
  • 1 cup cornmeal
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 slices turkey bacon
  • 4 slices whole grain bread
  • 4 leaves romaine lettuce
  • 1 avocado
  • 1 tomato

Instructions

  1. Slice the green tomatoes and soak them in buttermilk for 30 minutes.
  2. In a separate bowl, combine cornmeal, flour, salt, and pepper.
  3. Dredge the soaked tomatoes in the cornmeal mixture.
  4. Fry the tomatoes in a hot skillet until golden brown on both sides.
  5. Cook turkey bacon until crispy.
  6. Toast the bread and layer with lettuce, fried green tomatoes, turkey bacon, avocado, and sliced tomato.
  7. Top with the other slice of bread, slice, and serve.

Notes

  • For extra crunch, double fry the tomatoes.
  • Use a good quality bacon for best flavor.
