  • 2 medium zucchinis
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup vegetable oil for frying

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel; squeeze out excess moisture.
  2. In a mixing bowl, combine grated zucchini, salt, flour, Parmesan cheese, egg, garlic powder, onion powder, black pepper, and parsley.
  3. Heat vegetable oil in a frying pan over medium heat.
  4. Scoop tablespoon-sized amounts of the mixture into the pan and flatten slightly.
  5. Fry for 3-4 minutes on each side until golden brown and crispy.
  6. Remove from the pan and place on a paper towel-lined plate to drain excess oil.
