2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1/2 cup almond flour
2 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, combine the chopped spinach, feta cheese, almond flour, eggs, garlic powder, onion powder, salt, and black pepper.
Mix until well combined.
Using a spoon, drop small amounts of the mixture onto the prepared baking sheet, flattening each scoop slightly.
Drizzle olive oil over the top of each crisp.
Bake for 15-20 minutes or until the crisps are golden brown and crispy.
Allow to cool before serving.
Notes
For a spicier version, add red pepper flakes to the mixture.
