  • 2 cups cooked, shredded chicken
  • 1 cup queso cheese
  • 1 cup cream of chicken soup
  • 8 corn tortillas
  • 1 cup diced green chilies
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the shredded chicken, queso cheese, cream of chicken soup, diced green chilies, cumin, garlic powder, salt, and pepper.
  3. Soften the tortillas in the microwave for about 30 seconds.
  4. Spoon the chicken mixture into each tortilla and roll them up, placing them seam side down in a baking dish.
  5. Top with additional queso cheese and shredded cheddar cheese.
  6. Bake for 25-30 minutes until bubbly and golden.
