- 2 cups fresh cranberries
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup oats
- 1/2 cup brown sugar
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine cranberries, granulated sugar, and vanilla extract. Stir well and set aside.
- In another bowl, cream together the butter, flour, baking powder, and salt.
- Add oats and brown sugar to the mixture, combining everything well.
- Press half of the mixture into the bottom of a greased baking dish.
- Spread the cranberry mixture evenly over the pressed base.
- Sprinkle the remaining crumble mixture on top of the cranberries.
- Bake for 30-35 minutes or until the top is golden brown.
- Allow to cool before slicing into bars.
