Deliciously sweet and tangy, these cranberry crumble bars are a perfect treat for any occasion.

  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cranberries, granulated sugar, and vanilla extract. Stir well and set aside.
  3. In another bowl, cream together the butter, flour, baking powder, and salt.
  4. Add oats and brown sugar to the mixture, combining everything well.
  5. Press half of the mixture into the bottom of a greased baking dish.
  6. Spread the cranberry mixture evenly over the pressed base.
  7. Sprinkle the remaining crumble mixture on top of the cranberries.
  8. Bake for 30-35 minutes or until the top is golden brown.
  9. Allow to cool before slicing into bars.

Notes

  • For an extra touch, sprinkle powdered sugar over the bars before serving.
  • These bars can be served warm or at room temperature.
