A delicious, easy-to-make soda bread flavored with cheddar cheese and fresh herbs.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup grated cheddar cheese
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh herbs (such as rosemary and thyme)
  • 3/4 cup buttermilk
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the flour, baking powder, and salt.
  3. Stir in the grated cheddar and herbs.
  4. Make a well in the center and pour in the buttermilk and melted butter.
  5. Mix until the dough comes together, then turn it out onto a floured surface.
  6. Knead gently for a few moments, then shape into a round loaf.
  7. Place on a baking sheet and cut a cross in the top.
  8. Bake for 30-35 minutes or until the bread is golden and sounds hollow when tapped on the bottom.

Notes

  • For a twist, try adding jalapeños for extra heat!
  • This bread is best eaten fresh but can be toasted the next day.
