  • 1 pound shrimp, peeled and deveined
  • 1 cup flour
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1/2 cup chopped cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Set up a breading station with flour, beaten eggs, and panko breadcrumbs.
  3. Dredge shrimp in flour, dip in egg, then coat in panko.
  4. Place shrimp on a baking sheet and bake for 12-15 minutes until golden and crispy.
  5. In a bowl, mix mayonnaise, sweet chili sauce, and sriracha for the sauce.
  6. Warm tortillas in a skillet or microwave.
