- 1 pound chicken breast, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 teaspoons ground turmeric
- 4 cups chicken broth
- 2 carrots, sliced
- 1 celery stalk, sliced
- 1 bay leaf
- 1/2 teaspoon black pepper
- 2 cups spinach
- 1 tablespoon lemon juice
- Heat olive oil in a large pot over medium heat.
- Add chicken and sauté until browned.
- Add onions and garlic, and cook until translucent.
- Stir in turmeric, then add chicken broth, carrots, celery, bay leaf, and black pepper.
